The service well is designed to hold pre-chilled ingredients, not cool warm product. Plan the pan map around the menu and cover the well between services.

Installation and Operation

These benches are for maintaining chilled ingredients during preparation. Pre-chill product before loading, observe the pan fill line and cover the service well outside service periods. The optional glass gantry changes overall height and customer-side protection.
