For the longest non-stick life, use low-to-medium heat, preheat briefly rather than leaving the pan empty, match the burner to the base, and avoid thermal shock. Although some Flonal coatings are described as metal-tool resistant, silicone, wood or nylon remains the safer everyday choice. This is domestic cookware; a heavily worked restaurant line may be better served by duty-rated commercial aluminium, stainless steel or carbon steel.

Choose diameter by portion size and form by technique: 20–24cm suits small meals, 26–28cm is the everyday family range, and 30–32cm prioritises batch surface. A standard frypan maximises browning area; a deep pan contains sauce and tossing; a wok concentrates food in curved sides; a grill lifts food onto ridges; and a low crêpe pan improves turner access.
