Although some Flonal coatings are described as metal-tool resistant, silicone, wood or nylon remains the safer everyday choice. This is domestic cookware; a heavily worked restaurant line may be better served by duty-rated commercial aluminium, stainless steel or carbon steel.

Choose a baking pan by usable oven space and food depth, not only its outside dimensions. Aluminium heats quickly and the non-stick surface helps lasagne, roasting and slices release, but avoid cutting food in the pan. Pietra Viva bakeware is for the oven rather than induction use.
