Although some Flonal coatings are described as metal-tool resistant, silicone, wood or nylon remains the safer everyday choice. This is domestic cookware; a heavily worked restaurant line may be better served by duty-rated commercial aluminium, stainless steel or carbon steel.

Choose diameter by portion size and form by technique: 20–24cm suits small meals, 26–28cm is the everyday family range, and 30–32cm prioritises batch surface.
